Counting passes is the reliable way to know when the surface is ready for the next grit: it tells you whether you have actually covered the whole floor evenly, and it prevents you from stopping too early (deep scratches remain) or grinding too long (unnecessary wear and dust). A good rule is one full pass = one complete coverage of the floor with overlapping tool paths.
